Paleo Very Berry Muffins

Paleo Very Berry Muffins
Ingredients
- 6 large eggs, , room temperature
- ¼ cup honey
- ¼ cup coconut oil, , melted
- ¾ cup coconut flour, , sifted
- ¾ cup blanched almond flour, (I prefer Honeyville Farms)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1½ cups fresh berries, (I use blueberries, raspberries, and chopped strawberries)
Instructions
- Preheat the oven to 350ºF.
- Line 12 cups of a standard muffin pan with paper liners.
- In a large bowl, beat together the eggs, honey, and coconut oil.
- In another bowl, mix together the coconut flour, almond flour, baking soda, and baking powder.
- Slowly add the dry ingredients to the wet, stirring gently.
- Lastly, fold in the berries gently by hand.
- Pour into the lined muffin tins.
- Bake for 30 minutes or until brown around the edges and a toothpick inserted comes out clean.
- Cool completely before serving.
