Paleo Very Berry Muffins

Ingredients 

  • 6 large eggs, , room temperature
  • ¼ cup honey
  • ¼ cup coconut oil, , melted
  • ¾ cup coconut flour, , sifted
  • ¾ cup blanched almond flour, (I prefer Honeyville Farms)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • cups fresh berries, (I use blueberries, raspberries, and chopped strawberries)

Instructions 

  • Preheat the oven to 350ºF.
  • Line 12 cups of a standard muffin pan with paper liners.
  • In a large bowl, beat together the eggs, honey, and coconut oil.
  • In another bowl, mix together the coconut flour, almond flour, baking soda, and baking powder.
  • Slowly add the dry ingredients to the wet, stirring gently.
  • Lastly, fold in the berries gently by hand.
  • Pour into the lined muffin tins.
  • Bake for 30 minutes or until brown around the edges and a toothpick inserted comes out clean.
  • Cool completely before serving.
