Gluten Free Penne with Red Lentil Sauce Recipe

Ingredients 

  • 1 28 ounce can diced tomatoes
  • ½ cup hummus, flavor of choice
  • ½ cup red lentils
  • ½ - ¾ cup water
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Kosher or fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ cup nutritional yeast
  • 1 pound gluten-free penne pasta

Instructions 

  • Put the tomatoes, hummus, lentils, ½ cup water, and seasonings into a sauce pan. Bring to a boil, stir until everything is incorporated, then reduce to low and simmer for 10-15 minutes, until the lentils are cooked through.
  • Once the lentils are tender, add nutritional yeast and additional water, if needed. Remove from heat. Cook the pasta according to package instructions.
  • Once the pasta is done, remove ¼ cup of cooking liquid, then drain and add the pasta back to the pot. Pour in the sauce and reserved cooking liquid and toss to combine. Taste and adjust seasonings, as needed.
