Pesto Pizza with Shaved Asparagus

Ingredients 

  • 1 gluten-free vegan pizza crust
  • ¾ -1 cup vegan pesto, , preferably homemade (recipe here)
  • 3-4 asparagus spears
  • 1-2 cups pea shoots

Instructions 

  • Bake the crust according to recipe instructions.
  • When done, remove the crust from the oven and top with the pesto.
  • Shave asparagus strands using a vegetable peeler.
  • Cut the strands in half and sprinkle on the pizza.
  • Return to the oven and bake for 3-5 minutes.
  • Remove from the oven and top with pea shoots.
  • Cut into slices and serve immediately.
