Pesto Pizza with Shaved Asparagus

Pesto Pizza with Shaved Asparagus
Ingredients
- 1 gluten-free vegan pizza crust
- ¾ -1 cup vegan pesto, , preferably homemade (recipe here)
- 3-4 asparagus spears
- 1-2 cups pea shoots
Instructions
- Bake the crust according to recipe instructions.
- When done, remove the crust from the oven and top with the pesto.
- Shave asparagus strands using a vegetable peeler.
- Cut the strands in half and sprinkle on the pizza.
- Return to the oven and bake for 3-5 minutes.
- Remove from the oven and top with pea shoots.
- Cut into slices and serve immediately.
