Pixie Dust

Ingredients 

  • 60 grams golden flaxseeds
  • 20 grams  chia seeds , white or black
  • 15 grams psyllium seed husks

Instructions 

  • Grind all ingredients in a coffee grinder until floury.
  • Store in the freezer until needed.

Notes

(Note: 10 grams of this powder stands in well for ½ teaspoon of xanthan gum in other recipes. Just remove the same weight of flour from the recipe.)

    We need conversions for these ingredients from grams to teaspoons or cups.

      Hi Brenda,

      For this recipe, the author felt it was best to do it in weight, but I went ahead and looked up the conversions and here’s what I found:

      60 g flaxseeds = 6 tbsp
      20 g chia seeds = 2 tbsp
      15 g psyllium seed husk = 3 tbsp.

      Hope this helps!

    I am confused about the psyllium. Do I start with whole psyllium and then grind it with the other seeds, or do I start with psyllium husk powder but nevertheless grind it with the other seeds?

      You should grind the psyllium husks first and then grind all three together.

      This isn’t my recipe but from my understanding of the author, Jeanne’s post about Pixie Dust on her own website, this is meant as a replacement for xanthan gum and other gums in gluten-free baked goods.
