Chili con carne, or chili with meat, is a spicy stew with chili peppers, meat, and kidney beans. This Plant-Based Chili sin Carne Pasta Bake is my take on chili con carne … sin/without carne and turned into a pasta bake. It’s a redesigned main dish that I think you’re going to really enjoy.

To make this dish sin carne, you’re going to use plant-based meat. Pick your favorite, just make sure it’s gluten-free. And then to keep with the plant-based, vegan theme to this meal, I used a jar of Loca Plant Based Potato Queso which, as its name implies, is a “queso” style sauce made from potatoes and other veggies. It’s delicious and it really brings this whole dish together.

Plant-Based Chili sin Carne Pasta Bake

Ingredients 

  • Gluten-free nonstick cooking spray
  • Kosher or fine sea salt
  • 12 ounces gluten-free penne or other short pasta
  • 1 tablespoon olive oil
  • 1 large onion, , diced
  • 2 cloves garlic, , minced
  • 1 pound plant-based meat substitute
  • 1 (15-ounce) can red kidney beans, , rinsed and drained
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 (12-ounce) jar Loca Plant Based Potato Queso
  • 3 green onions, , thinly sliced
  • Vegan sour cream for serving, , optional

Instructions 

  • Preheat the oven to 350 degrees. Spray a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of salted water to a boil. Add the pasta and cook 1-2 minutes short of the cooking directions. Drain, saving some of the pasta cooking water.
  • Heat olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally until translucent, about 5 minutes. Add the garlic and cook, stirring, for 30 seconds. Crumble in the plant-based meat substitute and cook until browned, about 5 minutes. Add the beans, tomato sauce, diced tomatoes, chili powder, garlic and onion powders, 1 teaspoon salt, and pepper. Cook uncovered for 10 minutes. Add the pasta and queso and stir to combine. Thin with some of the reserved pasta water if it is too thick. Pour into the prepared baking dish and bake for 20-25 minutes.
