Potato Medley Hash
Ingredients
- 1 pound assorted Yukon Gold, red, and purple miniature potatoes
- 1 medium sweet potato
- 1 medium green bell pepper
- 3 medium shallots
- 1 tablespoon extra-virgin olive oil
- Salt and black pepper, to taste
Instructions
- Quarter the miniature potatoes, peel and dice the sweet potato, and chop the green pepper and shallot.
- Heat the olive oil in a large skillet over medium heat then add vegetables to the pan. Sauté for 30 minutes or until the potatoes are tender. Season with salt and pepper to taste. Transfer to a serving dish and serve while still warm.
