Prosciutto Wrapped Shrimp

Ingredients 

  • 24 (6-inch) wooden skewers
  • 3 tablespoons extra-virgin olive oil, , divided use
  • Juice of 1 lemon, , divided use
  • Kosher salt and black pepper
  • 24 large shrimp, , peeled and deveined
  • 8 thin slices prosciutto
  • 4 cups baby arugula

Instructions 

  • Soak the skewers in water for 30 minutes.
  • Combine 2 tablespoons of the olive oil, ½ of the lemon juice, and a big pinch of salt and pepper in a large plastic food storage bag.
  • Add the shrimp and marinate for 10 minutes.
  • Pat the shrimp dry and discard the marinade.
  • Cut each of the prosciutto slices in thirds lengthwise.
  • Wrap 1 prosciutto strip around each shrimp.
  • Push a skewer through the shrimp from the tail to the head.
  • Heat a grill or grill pan to medium heat.
  • Cook the shrimp for about 3 minutes per side or until the prosciutto starts to brown and the shrimp are cooked through.
  • Toss the arugula with the remaining tablespoon of olive oil and lemon juice.
  • Season to taste with salt and pepper and place on a platter.
  • Arrange the shrimp on top of the arugula and serve.
