Raw Butterscotch Blondies

Ingredients 

  • cups raw walnut halves , plus more for garnish, if desired
  • ½ cup raw shelled hemp seeds
  • ¼ cup lucuma powder
  • 6 tablespoons chopped prunes, 6-8 prunes
  • ¼ cup coconut nectar
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon fine sea salt

Instructions 

  • Line an 8-inch loaf pan with plastic wrap and set aside.
  • In a food processor, process the walnuts, hemp seeds, and lucuma until powdered. Add the remaining ingredients and process until the mixture forms a fairly smooth “dough.” Take care not to over-process, or the oils will separate out of the nuts. It should look moist but not oily, and stick together when pressed between your fingers.
  • Pack the mixture into the pan and cover with more plastic wrap. Refrigerate for at least 6 hours or overnight before cutting into small squares. Top each square with a walnut half, if desired.
