This Red, White & Blue Watermelon Pizza is a fun treat for the summer and looks patriotic enough for 4th of July!

Tips for choosing the best watermelon:

• Choose melons that feel heavy for their size. This indicates juiciness and a higher concentration of flavor.
• When selecting watermelon, look for melons that have a yellow spot somewhere on the rind. These tend to be sweeter melons. Also choose a rind with a matte appearance. A shiny rind can be an indicator of an underripe melon.

Ingredients 

  • 1 (1-2 inch thick) round watermelon slice (see note)
  • 1 cup (240 mL) vanilla yogurt (dairy-free or regular)
  • 2 cups (280 g) mixed berries (blueberries, raspberries, and sliced strawberries)
  • 2 tablespoons (10 g) toasted coconut flakes
  • Mint leaves and edible flowers, , for garnish (optional)

Instructions 

  • Spread the yogurt onto the watermelon, leaving a little pink watermelon flesh exposed as a border. Arrange berries on top in desired fashion. Sprinkle with coconut flakes. Garnish with mint leaves and edible flowers, if using. Cut into 8 wedges and serve immediately.

Notes

Note: For the watermelon “crust,” cut a 1-2 inch thick round slice from the center of a large seedless watermelon. You can easily make multiple pizzas by cutting multiple slices from the same melon.

Change it up: Use whatever fruit you’d like to top your pizza. Go tropical with mangos, kiwi, and bananas. Late summer stone fruits like cherries, peaches, and nectarines also make a beautiful topping. The yogurt can be replaced with whipped cream, whipped coconut cream, or cream cheese frosting as well.
