Summer Walnut Quinoa Salad

Ingredients 

  • 1 cup dry quinoa
  • cups water
  • 4 cups organic mixed spring greens
  • ¼ cup golden raisins
  • ¼ cup chopped walnuts
  • 2 tablespoons dairy-free parmesan-style cheese, (such as Go Veggie! Dairy-Free Parmesan Cheese)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions 

  • Place the quinoa and water in a small saucepan.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the quinoa is fluffy and the water has been absorbed, about 15 minutes.
  • Remove from heat and transfer to a large mixing bowl.
  • Cool for 15-20 minutes.
  • Add the remaining ingredients to the bowl with the quinoa.
  • Toss gently to combine. Serve.
