Summer Walnut Quinoa Salad

Summer Walnut Quinoa Salad
Ingredients
- 1 cup dry quinoa
- 1½ cups water
- 4 cups organic mixed spring greens
- ¼ cup golden raisins
- ¼ cup chopped walnuts
- 2 tablespoons dairy-free parmesan-style cheese, (such as Go Veggie! Dairy-Free Parmesan Cheese)
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon fresh lemon juice
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
- Place the quinoa and water in a small saucepan.
- Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the quinoa is fluffy and the water has been absorbed, about 15 minutes.
- Remove from heat and transfer to a large mixing bowl.
- Cool for 15-20 minutes.
- Add the remaining ingredients to the bowl with the quinoa.
- Toss gently to combine. Serve.
