I love a good cake in a mug. I have plenty of gluten-free mug cake recipes, which I have to say are really perfect for people who are gluten free. First, if you’re new to gluten-free baking, a mug cake is less intimidating than a big cake and it doesn’t waste a lot of ingredients if you mess it up. Second, if you live in a mixed-diet household of gluten-free people and gluten eaters, it’s much simpler to be able to prepare your own little cake in your own little mug if the gluten eaters are having their own gluten-filled desserts. And lastly, my mug cakes typically serve two people, so they’re great for a date night or if you want to share with a friend and show them how tasty a gluten-free dessert can be. So without further ado, I bring you my newest mug cake – SunButter & Jelly Mug Cakes for Two.

Just in time for Valentine’s Day, this dessert takes all of 5 minutes to prepare and as the name implies, it serves two. That’s one serving for two people or two servings for you – your choice! The base of this cake is gluten-free all-purpose flour (any brand will do; I use my own flour blend), SunButter (I suggest using creamy or organic; you can also try their new chocolate one but I haven’t tried that in this cake myself yet), and of course, jelly. You can use whatever variety of jelly/jam you prefer, but mixed berry is always a nice one.

This is the perfect last-minute dessert to make after a nice dinner with your significant other, right before plopping down on the couch for some cuddle time and movies. Happy Valentine’s Day, everyone!

Gluten-Free SunButter & Jelly Mug Cakes for Two

Ingredients 

  • Gluten-free non-stick cooking spray
  • ¼ cup gluten-free all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher or fine sea salt
  • 3 tablespoons milk, , any kind
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ cup Creamy or Organic SunButter
  • 4 tablespoons mixed berry jam or jam of choice

Optional toppings:

  • More jam
  • Whipped cream
  • Fresh berries
  • Mint leaves

Instructions 

  • Spray two 8-ounce ramekins or large mugs with cooking spray.
  • In a large glass measuring cup or small bowl, combine the flour, baking powder, salt, milk, maple syrup, and vanilla, mixing well until no clumps. Stir in the SunButter until fully mixed. Divide the mixture between the prepared ramekins or mugs.
  • Add 2 tablespoons of jam to each ramekin and stir just enough to swirl the jam through the batter. Microwave at full power for approximately 2 minutes or until a toothpick inserted into the center comes out clean. If it doesn’t come out clean, continue to microwave in 15 second intervals.
  • Serve with any toppings desired.
