Superfoods Salad
Ingredients
- 2 cups kale, , stems removed and chopped
- Olive oil
- 2 cups quinoa, , cooked
- 1 cup mixed berries, (such as strawberries, blueberries, and raspberries)
- 1 orange, , peeled and segmented
- ¼ cup pomegranate seeds, , plus more for garnish
- Chopped basil leaves, , for garnish
Instructions
- In a large bowl, massage the chopped kale with a drizzle of olive oil for a few minutes to soften it.
- Add the cooked quinoa to the kale, along with the mixed berries, orange segments, and pomegranate seeds. Toss gently to combine.
