Ingredients 

  • 2 cups kale, , stems removed and chopped
  • Olive oil
  • 2 cups quinoa, , cooked
  • 1 cup mixed berries, (such as strawberries, blueberries, and raspberries)
  • 1 orange, , peeled and segmented
  • ¼ cup pomegranate seeds, , plus more for garnish
  • Chopped basil leaves, , for garnish

Instructions 

  • In a large bowl, massage the chopped kale with a drizzle of olive oil for a few minutes to soften it.
  • Add the cooked quinoa to the kale, along with the mixed berries, orange segments, and pomegranate seeds. Toss gently to combine.
