Sweet Radish & Brussels Sprout Slaw

Sweet Radish & Brussels Sprout Slaw
Ingredients
- 4 cups shredded Brussels sprouts
- 2½ cups shredded radishes
- 1 cup shredded carrots
- 1½ cups peeled and diced crisp apple
- 2/3 cup dried natural cranberries, without added sugar
- ½ cup sliced almonds
- 1 cup mayonnaise, preferably homemade
- ½ cup unsweetened almond milk
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1½ teaspoons salt
Instructions
- Combine the brussels sprouts, radishes, and carrots in a large bowl.
- Add the diced apples, dried cranberries, and almonds.
- In a smaller bowl, mix the mayonnaise, almond milk, vinegar, honey, and salt.
- Add the dressing to the vegetable mixture and stir thoroughly. For best results, refrigerate for at least 4-6 hours, preferably overnight, before serving.
