Sweet Radish & Brussels Sprout Slaw

Ingredients 

  • 4 cups shredded Brussels sprouts
  • cups shredded radishes
  • 1 cup shredded carrots
  • cups peeled and diced crisp apple
  • 2/3 cup dried natural cranberries, without added sugar
  • ½ cup sliced almonds
  • 1 cup mayonnaise, preferably homemade
  • ½ cup unsweetened almond milk
  • 3 tablespoons  apple cider vinegar
  • 2 tablespoons honey
  • teaspoons salt

Instructions 

  • Combine the brussels sprouts, radishes, and carrots in a large bowl.
  • Add the diced apples, dried cranberries, and almonds.
  • In a smaller bowl, mix the mayonnaise, almond milk, vinegar, honey, and salt.
  • Add the dressing to the vegetable mixture and stir thoroughly. For best results, refrigerate for at least 4-6 hours, preferably overnight, before serving.
