Garlic: The Star of the Show

With eight cloves of fresh garlic, this recipe is made for garlic lovers.

Cooking the garlic gently in butter allows it to become fragrant and mellow without browning, creating a rich foundation for the sauce. The key is to keep the heat moderate so the garlic softens and sweetens rather than becoming bitter.

The result is a luscious sauce that clings beautifully to every strand of pasta.

What You’ll Need

  • Gluten-free spaghetti
  • San-J Tamari
  • Butter or dairy-free butter
  • Fresh garlic
  • Honey or brown sugar
  • Toasted sesame oil
  • Crushed red pepper flakes (optional)
  • Green onions
  • Toasted sesame seeds
  • Fresh lime wedges
  • Kosher salt and black pepper

Tips for Perfect Garlic Noodles

  • Salt the pasta water generously for the best flavor.
  • Reserve some of the pasta cooking water before draining. The starches help create a silky sauce that coats the noodles beautifully.
  • Cook the garlic gently, don’t let it brown, or it can become bitter.
  • Toss the noodles immediately in the sauce while they’re still hot so they absorb maximum flavor.
  • Finish with fresh lime juice just before serving to brighten the rich garlic butter sauce.

Easy Ways to Customize This Recipe

  • Flank steak
  • Crispy tofu
  • Sautéed mushrooms
  • Broccoli
  • Snap peas
  • Bok choy
  • Spinach
  • Edamame

You can also increase the red pepper flakes or add a drizzle of chili crisp for extra heat.

  • Grilled salmon
  • Sesame-crusted tuna
  • Teriyaki chicken
  • Garlic butter shrimp
  • Asian cucumber salad
  • Roasted broccoli
  • Steamed green beans
  • Crispy tofu
  • Simple cabbage slaw

They’re equally delicious as a side dish or a satisfying vegetarian main course.

Frequently Asked Questions

Is tamari the same as soy sauce?

Not exactly. While both are fermented soy-based sauces, tamari typically has a richer, smoother flavor and is traditionally made with no wheat. Always check the label if you need a certified gluten-free product, such as San-J Gluten Free Tamari.

Can I make this recipe dairy-free?

Yes. Simply substitute your favorite dairy-free butter. The noodles will still have a rich, silky texture.

Why reserve the pasta water?

The starch in the cooking water helps emulsify the butter and tamari into a glossy sauce that coats every strand of pasta instead of pooling in the bottom of the pan.

Can I make these noodles ahead of time?

These noodles are best enjoyed immediately after cooking, but leftovers can be refrigerated for up to three days. Reheat gently in a skillet with a splash of water to loosen the sauce.

Can I use another type of gluten-free pasta?

Absolutely. While spaghetti creates the classic garlic noodle experience, gluten-free linguine, fettuccine, or even ramen-style noodles work beautifully.

A Weeknight Recipe You’ll Keep Coming Back To
