If you have kids in college or you’re a college student yourself, this Three-Minute Three-Ingredient Blueberry French Toast in a Mug is a perfect no-mess recipe for a dorm room. Or, dorm room or not, this is great when you want a quick, hot breakfast.
One of the three ingredients in this recipe is a single-serve blueberry muffin from Flax 4 Life. These gluten-free muffins are packed with healthy omega-3 fatty acids, fiber, and lignans thanks to … you guessed it … flax! These are great to have on hand to throw in your bag or for quick recipes like this one.

Three-Minute Three-Ingredient Blueberry French Toast in a Mug
Ingredients
- 1 single serve Flax 4 Life Blueberry Muffin
- 1 large egg
- 3 tablespoons milk or dairy free milk
Instructions
- Dice the muffin and place in a mug or 1 cup ramekin. Whisk the egg and milk together very well. Pour over the muffin, push down the muffin into the egg and milk mixture. Let sit for a minute then microwave on full power for 2 minutes or until the egg mixture is set.
