Gluten Free Dairy Free Pineapple Coconut Pops Recipe
Finally! After a long, cold, hard winter, the sun is out and the weather is warming up. For many in the U.S., this is a relief.
Summer is definitely on the way. While this is great news, it also means that swim suit season is right around the corner. The very idea of putting on a swim suit can strike fear into the heart of even the most courageous.
After a winter of staying indoors to avoid the freezing cold, bundling up in layer upon layer of heavy clothing, and dining on rib-sticking food to keep us warm, it is time to shed both those heavy outer layers of clothing and some of the stuff that is still sticking to our ribs!
These simple Gluten Free Dairy Free Pineapple Coconut Pops are a great way to beat the heat while leaning into a lighter way of eating treats. They have just three ingredients and require only a blender and some way of freezing the pops – you can use a cool popsicle mold or even just use Dixie cups with popsicle sticks.
Pineapple is packed with digestive enzymes which keep the digestive tract in good order – a real plus if you are looking to shed a few pounds.
Coconut milk is filled with vitamins, minerals, and electrolytes which will keep the body hydrated as the temperatures start to soar. You can use full-fat coconut milk (healthy fat – not the bad kind) or to cut calories more, light coconut milk.
To cut back on sugar, stevia is a good option for balancing the tartness of the pineapple without added calories. If you are like me and have found it difficult to jump on the stevia bandwagon, I have a new product I would like to introduce you to, Organic Sweet and Lite from Wholesome Sweeteners. It is a blend of organic stevia and organic sugar with half the calories of sugar. I prefer this recipe with the Organic Sweet and Lite but if you want to use all stevia, start with ¼ cup and add more to taste.

Gluten Free Dairy Free Pineapple Coconut Pops Recipe
Ingredients
- 4 ½ cups chopped fresh pineapple
- 1 cup coconut milk
- ¾ cup Wholesome Sweeteners Organic Sweet and Lite
Instructions
- Place all ingredients in a blender and process until smooth. Strain the mixture through a fine sieve. Pour into popsicle molds and freeze for 3 hours or until frozen solid.

Why can’t I just leave all that good fiber in , why does it have to be strained?
