Gluten Free Sunflower Cookies
Sunflowers are happy flowers! With their bright yellow petals and pretty brown centers, they scream joyous, carefree, summer days. I wanted to create a cookie that was just as happy as the sunflower and I did. It is even made with sunflower seeds thanks to Sunbutter, the nut-free peanut butter alternative. These are called gluten free sunflower cookies.
These cookies are almost as fun to make as they are to eat and require no heavy equipment such as a mixer, just a spoon and bowl will do. Get the kiddos involved – unless of course you prefer to keep these babies all to yourself!
Gluten Free Sunflower Cookies
Ingredients
- 1 cup Creamy Sunbutter
- 1 cup sugar plus more for rolling the cookies
- 1 large egg
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
- ¼ teaspoon fresh lemon juice
- 24 chocolate kisses candies make sure they are gluten free
Instructions
- Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone baking mats.
- Combine the Sunbutter, 1 cup sugar, egg, baking powder, vanilla, and lemon juice in a mixing bowl and stir until well blended. Roll tablespoonfuls into balls, roll in the sugar, and place on the prepared baking sheets 2 inches apart. Bake for 11 – 12 minutes.
- Let cool for 2 minutes then press a chocolate kiss into the center of each cookie, pressing down slightly. Let cool for 10 more minutes. Can be eaten warm, right away, or saved for later. Store in an airtight container.
