Gluten-Free Quick Barbecue Chicken Sliders

I’m assuming you have leftover turkey from Thursday sitting in your fridge right about now – am I right? If so, don’t mind the name of this Gluten-Free Quick Barbecue Chicken Sliders recipe – it says chicken, but you can use either chicken or leftover shredded turkey. Either one will work beautifully.

The most important part of these sliders is the bread. It’s got to be a good-quality gluten-free bread – that’s why I chose Schär’s ciabatta rolls. Also be sure your barbecue sauce is gluten-free! And lastly, I have several coleslaw recipes on the website that you could use for this or just whip up a basic one with a bag of pre-sliced coleslaw mix and some mayo.

These are great for quick and easy lunches all year round, to use up leftover chicken or turkey from recent dinners, and they’re kid-friendly, too!

Ingredients

  • 2 cups shredded cooked chicken (from a rotisserie chicken) or leftover shredded turkey
  • ½ cup barbecue sauce
  • 4 Schär ciabatta rolls
  • Coleslaw
  • Dill pickle slices

Instructions

  • Heat the chicken and barbecue sauce in a skillet over medium heat until warmed through.
  • Divide the chicken evenly among the bottom rolls, add pickle slices and coleslaw, then place the top of the roll on top and serve.
