Bacon, Egg and Cheese Casserole
Ingredients
- 2 gluten-free everything bagels
- 10 eggs
- 3 tablespoons milk of choice
- 6 slices of crispy bacon
- 1 cup shredded cheddar cheese, , optionally dairy-free or low-fat
Instructions
- Preheat oven to 350°F. Grease a 9×9-inch baking dish with nonstick cooking spray or line with parchment paper.
- Cut the bagels into smaller pieces. Add to the bottom of the baking dish.
- Crack the eggs into a separate bowl. Add milk and whisk together.
- Pour the egg mixture over the bagel pieces, ensuring they are evenly coated.
- On a cutting board, cut the bacon up into small pieces. For extra crispy bacon, pan fry or air fry your bacon ahead of time.
- Top the casserole with shredded cheese and chopped bacon pieces.
- Bake for 40-45 minutes, or until the egg mixture is set and the bagels are lightly golden brown. Serve hot and enjoy!
