Bacon, Egg and Cheese Casserole

Ingredients 

  • 2 gluten-free everything bagels
  • 10 eggs
  • 3 tablespoons milk of choice
  • 6 slices of crispy bacon
  • 1 cup shredded cheddar cheese, , optionally dairy-free or low-fat

Instructions 

  • Preheat oven to 350°F. Grease a 9×9-inch baking dish with nonstick cooking spray or line with parchment paper.
  • Cut the bagels into smaller pieces. Add to the bottom of the baking dish.
  • Crack the eggs into a separate bowl. Add milk and whisk together.
  • Pour the egg mixture over the bagel pieces, ensuring they are evenly coated.
  • On a cutting board, cut the bacon up into small pieces. For extra crispy bacon, pan fry or air fry your bacon ahead of time.
  • Top the casserole with shredded cheese and chopped bacon pieces.
  • Bake for 40-45 minutes, or until the egg mixture is set and the bagels are lightly golden brown. Serve hot and enjoy!
