Creamy Kohlrabi Slaw

Creamy Kohlrabi Slaw
Ingredients
- 4 cups shredded kohlrabi, (about 2 large or 3 medium)
- 2 cups cherry tomatoes, , halved
- 1 cup peeled and diced apple
- ¾ cup walnuts, , chopped (optional)
- ¼ cup dried cranberries
- 1 tablespoon finely diced sweet onion
- ½ cup mayonnaise, , preferably homemade or organic
- 2 tablespoons unsweetened almond milk
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- Sea salt, , to taste
Instructions
- In a large bowl, combine the kohlrabi, tomatoes, apples, walnuts (if using), cranberries, and onions.
- Toss to combine.
- In a separate bowl, whisk together the mayonnaise, almond milk, vinegar, and honey.
- Pour the dressing over the slaw and toss to coat.
- Season to taste with salt.
- Refrigerate for at least 2 hours or overnight for the best flavor
