Creamy Kohlrabi Slaw

Ingredients 

  • 4 cups shredded kohlrabi, (about 2 large or 3 medium)
  • 2 cups cherry tomatoes, , halved
  • 1 cup peeled and diced apple
  • ¾ cup walnuts, , chopped (optional)
  • ¼ cup dried cranberries
  • 1 tablespoon finely diced sweet onion
  • ½ cup mayonnaise, , preferably homemade or organic
  • 2 tablespoons unsweetened almond milk
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Sea salt, , to taste

Instructions 

  • In a large bowl, combine the kohlrabi, tomatoes, apples, walnuts (if using), cranberries, and onions.
  • Toss to combine.
  • In a separate bowl, whisk together the mayonnaise, almond milk, vinegar, and honey.
  • Pour the dressing over the slaw and toss to coat.
  • Season to taste with salt.
  • Refrigerate for at least 2 hours or overnight for the best flavor
