Gluten Free Italian Sausage and Polenta Hash Recipe

To my way of thinking, there is nothing like a hearty hash to start your day off right!

This Gluten Free Italian Sausage and Polenta Hash Recipe is a tasty variation of your typical hash that has corned beef and potatoes. Crispy bits of fried polenta with Italian sausage, peppers, and onions give this hash a decidedly Italian flair.

I keep tubes of Ancient Harvest polenta in my fridge at all times – it is such an easy way to incorporate delicious polenta into meals without all the fuss and mess of making polenta from scratch. If you have ever had to chisel out your polenta cooking pot, you will know what I am talking about! I used the Sun Dried Tomato and Garlic variety in this dish to go along with my Italian theme, but you can use any flavor you like.

This dish is great as is and even better topped with a perfectly poached egg!

Gluten Free Italian Sausage and Polenta Hash Recipe

Ingredients 

  • 1 (18-ounce) tube Ancient Harvest polenta
  • 2 tablespoons olive oil
  • 1 pound loose Italian sausage, or remove the sausage from casings
  • 2 red peppers, seeded and chopped
  • 1 large white or yellow onion, cut into thin wedges
  • 2 cloves garlic, minced
  • 1 teaspoon gluten free Italian seasoning
  • ½ cup Parmesan cheese or dairy free substitute
  • 2 tablespoons fresh chives, chopped

Instructions 

  • Cut the polenta into ½ inch slices then cut the slices into quarters.
  • Heat the oil in a large skillet over medium-high heat. Add the polenta and fry, turning occasionally, until golden brown, about 5 minutes. Remove the polenta from the pan and reserve.
  • Add the sausage, red peppers, onion, garlic, and Italian seasoning and cook until the vegetables are soft and the sausage is cooked through, about 10 minutes. Add the reserved polenta back into the pan with the Parmesan cheese and heat through. Stir in the chives and serve.
