Grilled Chicken with Cherry Tomato Salad
Ingredients
- 1 pint (284 g) cherry tomatoes, halved
- ½ cup (90 g) Kalamata olives, halved
- 2 tablespoons (18 g) capers
- ¼ cup (30 g) white onion, minced
- 1 clove garlic, , finely minced
- 2 tablespoons (7.5 g) fresh parsley, chopped
- 2 tablespoons (30 mL) extra-virgin olive oil, plus more for greasing
- Kosher or fine sea salt
- Freshly ground black pepper
- 4 boneless, , skinless chicken breasts
Instructions
- Add the cherry tomatoes, olives, capers, onion, garlic, parsley, and olive oil in a mixing bowl along with ½ teaspoon salt and ¼ teaspoon pepper. Toss gently to combine and allow to marinate for 30 minutes.
- Preheat the grill to medium-high heat, and oil the grate. Lightly brush both sides of the chicken breasts with olive oil and season to taste with salt and pepper.
- Grill the chicken for 8-10 minutes per side, until cooked through. Spoon the cherry tomato salad on top and serve immediately.
