Grilled Chicken with Cherry Tomato Salad

Ingredients 

  • 1 pint (284 g) cherry tomatoes, halved
  • ½ cup (90 g) Kalamata olives, halved
  • 2 tablespoons (18 g) capers
  • ¼ cup (30 g) white onion, minced
  • 1 clove garlic, , finely minced
  • 2 tablespoons (7.5 g) fresh parsley, chopped
  • 2 tablespoons (30 mL) extra-virgin olive oil, plus more for greasing
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • 4 boneless, , skinless chicken breasts

Instructions 

  • Add the cherry tomatoes, olives, capers, onion, garlic, parsley, and olive oil in a mixing bowl along with ½ teaspoon salt and ¼ teaspoon pepper. Toss gently to combine and allow to marinate for 30 minutes.
  • Preheat the grill to medium-high heat, and oil the grate. Lightly brush both sides of the chicken breasts with olive oil and season to taste with salt and pepper.
  • Grill the chicken for 8-10 minutes per side, until cooked through. Spoon the cherry tomato salad on top and serve immediately.
