Ingredients 

Caramelized Onions

  • 2 ½ pounds white or yellow onions, (3 large)
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • ½ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 4 sprigs fresh thyme
  • 2 tablespoons balsamic vinegar

Spicy Mayonnaise

  • ¾ cup mayonnaise
  • 2 tablespoons sriracha sauce

Burgers

  • 1 pound ground boneless beef short ribs
  • 1 pound ground skirt steak or tri-trip
  • Vegetable oil
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • 6 gluten-free hamburger buns
  • 3 tablespoons melted butter
  • 6 lettuce leaves
  • 6 slices tomato

Instructions 

  • Make the caramelized onions: Cut onions in half and slice thinly. Heat butter and oil together in a large skillet over medium low heat.
