Ingredients 

  • 2 (5-ounce) bags Jackson’s Sea Salt Sweet Potato Chips
  • 1 (5-ounce) round brie cheese, rind removed and cut into small pieces
  • 2 ounces Prosciutto, torn into small pieces
  • 1 cup grated Mozzarella cheese
  • 2 tablespoons pimentos, drained
  • 1 tablespoon capers, drained
  • ¼ cup chopped Italian parsley

Instructions 

  • Heat oven to 300 degrees. Line a sheet pan with parchment paper.
  • Layer the chips onto the baking sheet. Dot with brie and Prosciutto, sprinkle the Mozzarella cheese over the top, sprinkle with pimentos and capers, and bake for about 5 minutes or until the Mozzarella is melted. Top with parsley and serve.
