Szechuan Crispy Tofu and Vegetable Stir Fry

Fast and simple dinners are my go-to recipes because, by the time the day winds down, I never have the time to cook up anything too fancy. This Szechuan Crispy Tofu and Vegetable Stir Fry is quick, easy to make, and tastes amazing! This recipe serves 4 people, and it is sure to impress.

To make this stir fry you first place the tofu between two layers of paper towels and place something heavy on top to drain out the moisture. Then toss the cubed tofu and cornstarch together in a mixing bowl. Then in a skillet you add all the tofu in a cook until brown. Once the tofu is cooked you set it aside and add all the veggies in the skillet to cook. Then you add the tofu back in with the San-J Szechuan Sause until heated.

Once the stir fry is done you serve over rice. I like to top mine with sesame seeds and green onions. Give this recipe a try.

Szechuan Crispy Tofu and Vegetable Stir Fry

Ingredients 

  • 2 (14 ounce) packages extra firm tofu
  • 4 tablespoons cornstarch
  • 3 tablespoons vegetable oil, , divided
  • 2 cups coleslaw mix
  • 1 cup sugar peas
  • 4 ounces sliced mushrooms
  • 1 red bell pepper, , seeded, deveined, and thinly sliced
  • ½ onion, , thinly sliced
  • ½ cup San-J Szechuan Sauce
  • 4 cups cooked rice
  • 2 green onions, , sliced
  • 2 tablespoons sesame seeds

Instructions 

  • Place the tofu between two layers of paper towels and place something heavy on top (like a heavy pot) to drain out moisture. Let sit for 30 minutes.
  • Cut tofu into 1-inch cubes, place in a mixing bowl, and toss with cornstarch.
  • Heat 2 tablespoons oil over medium heat in a large skillet or wok until hot, add tofu, in batches, and cook until golden brown on all sides, about 2 minutes per side. Remove from pan.
  • Add another 1 tablespoon oil, add the vegetables, and stir fry until crisp tender, 3–5 minutes. Add the tofu back to the pan with the Szechuan Sauce and cook, stirring gently, until heated through.
  • Serve over cooked rice topped with green onions and sesame seeds.
