Ingredients 

  • 1 (13.5 ounce) can full fat coconut milk
  • 6 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • 3 teaspoons Singing Dog Vanilla Pure Vanilla Extract, , divided
  • 2 tablespoons dairy free butter
  • 2 tablespoons brown or coconut sugar
  • 2 bananas, , sliced about ½ inch thick
  • Toasted coconut flakes
  • Optional garnishes:
  • Cinnamon sticks
  • Star anise

Instructions 

  • Combine coconut milk and chia seeds in a small saucepan. Heat over medium-low heat until it comes to a low simmer. Continue to cook, stirring often for 2-3 minutes or until thickened to your liking. Stir in the maple syrup and 2 teaspoons vanilla.
  • In a skillet, melt butter over medium heat, add the brown sugar, 1 teaspoon vanilla, and banana slices. Cook for 2-3 minutes or until syrupy.
  • Top pudding with caramelized bananas and coconut.
  • Garnish as desired.
