Gluten Free No Bake Cookies & Creme Cheesecakes Recipe

If I had known it was to be our last time together, I would have paid more attention. I would have etched into my memory every detail, every sensation, and every joyous nano-second. I would not have taken our time together for granted, as if it could happen again at any moment. How could have I been so careless, so blasé?

In truth, I don’t even remember the last time I ate an Oreo cookie – it never occurred to me that they wouldn’t always be a part of my life. And to be very honest, I didn’t even mourn the loss of Oreos along with other gluten-filled foods such as pasta and bagels at the time of my gluten intolerance diagnosis. It wasn’t as if I ate them every day. But then I saw my husband eating one, gently twisting the two chocolate wafers away from the creamy white center, scraping almost all of the filling with his teeth then crunching happily on each lightly creamy layered cookie, one at a time. Oh the envy. Oh the remorse. It was then that I mourned.

You can imagine my joy when I was meandering through the gluten free section of my local natural foods store and found Kinnitoos – gluten free chocolate sandwich crème cookies! They looked just like the beloved cookies of my past, but how did they taste? Let me give you a clue – I created a whole dessert in honor of them! – No Bake Cookies & Crème Cheesecakes.

This dessert is so simple and it takes maybe 5 minutes to prepare. To make it even easier you can forgo whipping the cream and substitute an 8 ounce tub of Cool Whip and if you want to reduce the fat and calories, use fat free Cool Whip and low fat cream cheese. The cheesecakes are ready to eat after just a few minutes in the fridge or you can even make them up to a day ahead.

  • 21 Kinnitoos
  • 1 cup heavy cream
  • 8 ounces cream cheese softened
  • ½ cup sugar
  • 1 teaspoon pure vanilla extract


  • Place paper liners in the cups of a standard muffin pan (12 cups).
  • Take 3 of the cookies, cut them in quarters for garnish and set aside. Place 12 cookies in a plastic freezer bag and pound them with a rolling pin until they turn into fine crumbs. Divide the crumbs among the muffin cups and press down firmly and evenly. Place the remaining cookies in the bag and break them up so that there are bigger pieces of cookie as well as some crumbs.
  • Whip the cream on high speed until stiff peaks form with a hand held mixer. Place the cream cheese, sugar and vanilla in a large mixing bowl and beat on high speed until smooth and well blended. Fold in the whipped cream and the crushed cookie pieces. Spoon the mixture into the muffin cups. Place one of the quartered cookies on top of each cheesecake. Refrigerate until serving, at least 5 minutes, up to a day ahead.

  2. Since going gluten/dairy/egg/refined sugar-free, I really have not missed Oreos. Until right now. And if I find a dairy-free alternative for that cream cheese (c’mon…. not a problem), I don’t have to miss them at all! :) Though I’m not sure if Kinnitoos are safe for me… I shall check now!       I know they are gluten and dairy free but not sure about refined sugar. Dairy free cream cheese is easy peasy so I think you are most of the way there. Good luck!

          I’m also dairy-free and I’m going to replace the heavy cream with coconut cream! Essentially you separate the cream layer from the water layer from the canned coconut milk. Whips perfectly.

    Oh these look great! I really had to watch when I found Kinnitoos…would eat the whole package if I could (okay maybe not such a great idea). Will have to give these little cheesecakes a whirl, as I can see my friends not even knowing that they are GF. Will say that I miss freshly baked bread that has a soft doughy texture with butter and strawberry jam…and that is what I would have more carefully etched in this mind of mine.     I love your description of mourning and I can feel your pain and distress. We don’t really have Oreo cookies here in New Zealand so I don’t mourn them but oh boy, I have many moments of mourning and it is usually when my husband is eating something that I will suddenly miss so much. And the sad thing is that he is blissfully unaware of how I am feeling.

      Oreaos were such a part of my childhood. It is funny that people who can eat what ever they want rarely think of the loss of not being able to eat someting one once loved.

    Hi, just wanted to let you all know about “Healthy Top” by Mimiccreme( You will be in heaven after tasting this whipped topping. It is awesome, better than the dairy stuff…my non-gf husband always asks for it on just about everything. I picked it up from
    I plan to make this recipe today and use 1 cup of “Healthy Top” instead of heavy cream. One aseptic pack of HT makes 4 lustrious cups of whipped topping. I love the fact it is in an aseptic container and I keep them right at my finger tips. No worry about spoiling. It is so good when mixed with instant espresso grans and also …of course cocoa powder…..mmmmm. Well, are ya hooked will be…try it soon.

    Delicious! I love them out of the freezer; so fun to make. I used 2 zipperlock bags…ya, I just couldn’t waste those yummy cookie crumbs the spoon couldn’t reach. I did increase the Healthy Top to 2 cups.
    I am anxious to try Galaxy’s new dairy-free cream cheese product. Have you seen it in your Florida markets?

    Please try the Mi-del Chocolate wafer cookies. I faciliated a taste test and the results were an overwhelming slam dunk! (4 out of 5 consistently chose the Mi-del cookies) Much more chocolately taste! Just say’in…..This recipe looks Yumm-O! Thanks for sharing…

    oh. my. gosh. If it wasn’t 9pm, I’d run back to the store NOW to get what I need for this…. I cannot buy these GF Oreo cookies at all, because I will eat. every. in no time flat. BUT I’m aaaaaall about the freezer, and so glad these can be frozen!! I will literally have to make them and then hide them from myself at the back of the freezer so I forget about them. Until I find them. And eat them.

    I miss Krispy Kreme donuts.

    Absolutely delicious and super easy to make. My only problem was the base didn’t hold together at all so I had to eat them from the patties with a spoon. Any thoughts about baking the base to firm it up a bit?

      Hi Brittany,

      You could try mixing the cookie crumbs with a little bit of melted butter or coconut oil, then portion them out and refrigerate or freeze the bases for a little while so they solidify, then finish the recipe from that point. Let me know how it goes!
