Lychee Eyeballs and Halloween Cocktails
Halloween is no time to be subtle! It’s one time where it is entirely appropriate to go over the top and to incorporate creepy, spooky, gruesome, and gross into pretty much everything!
And when I say everything, I’m not just talking decorations and décor. I’m also talking food and drinks as well. And I’m talking ice cubes.
Who wants to use regular old ice cubes when you can have eyeballs keeping your drinks cold? And have eyeball ice cubes that taste delicious?
These creepy eyeball ice cubes are made with canned lychee nuts and maraschino cherries. They are creepy. They are gruesome. They are PERFECT for Halloween! And they are dead simple to make.
Of course you are going to need some drinks to put those eyeball ice cubes into so I offer you two recipes – Swamp Punch for the kids and Lychee Martinis for the grown-ups – after all, why should the kiddos have all the fun?
Lychee Eyeball Ice Cubes
Ingredients
- 1 (20-ounce) can whole lychees
- 1 (10-ounce) jar maraschino cherries without stems
Instructions
- Drain the lychees (reserve the syrup for Lychee Martinis if desired). Place the lychees in a bowl and pour the maraschino cherry syrup over them. Let sit for about 10 minutes or until the lychees look “bloodshot”. Remove from the syrup and blot dry with paper towels. Insert a whole maraschino into the hole of the lychees.
- Place on a plate or sheet pan to dry and put in the freezer for at least an hour or until firm and cold. Can be made several days ahead and kept in the freezer.
- Use as ice cubes for drinks.
Swamp Punch
Ingredients
- 1 quart lime sherbet
- 1 liter ginger ale
- 2 cups pineapple juice
- Gummy worms and/or spiders
Directions
Combine sherbet, ginger ale, and pineapple juice in a pitcher or punch bowl. Stir until combined. Serve in glasses or small mason jars garnished with gummy worms and spiders.Servings
Serves 10Ingredients

Lychee Martini
Ingredients
- 3 ounces vodka
- 2 ounces reserved lychee syrup
- ½ ounce dry vermouth
- 1 Lychee Eyeballs or more
Instructions
- Pour ingredients into a cocktail shaker filled with ice. Shake well. Pour into a martini glass and drop in one or two lychee eyeballs.
