Gluten Free Two Ingredient No-bake Icebox Cake Recipe
Cake! Two ingredients! No baking! You heard that right. This ridiculously delicious gluten free two ingredient no-bake icebox cake recipe is so darn easy, ANYONE can make it!
All you need is some cream and a box of gluten free chocolate sandwich cookies (I used Kinnikinnick Kinitoos).
The only hard part about making this icebox cake is waiting – it is best made the night before and allowed to sit in the fridge for about 8 hours or up to a day or two. The longer it sits, the better it gets, in my opinion. This cake is perfect for entertaining, as you can make it way ahead of time. Just don’t tell your guests how darn easy it was!
Gluten Free Two Ingredient No-bake Icebox Cake Recipe
Ingredients
- 1 (8 ounce) box Kinnikinnick Kinitoos
- 1 ½ cups heavy cream
Instructions
- Line a 4- by 8-inch loaf pan with plastic wrap, letting the wrap hang over the edges.
- Separate the cookies and scrape the cream filling out into a heat-proof bowl. Place the bowl over a pan of simmering water and melt the cream filling, but don’t let it get hot.
- Add the melted cream filling to the cream and whip on high speed until stiff peaks form.
- Place a layer of the cookies in the pan, top with cream, then continue repeating the layers. Bring the plastic wrap up over the edge and refrigerate for at least 8 hours or up to 2 days.
- Invert the cake onto a serving platter, remove the plastic wrap, and serve.

sounds and looks great but the kiddos are also allergic to dairy !
We are also, we use a non-dairy whipping cream for recipes like these. Rich’s is the brand we use found in the freezer section of Piggly Wiggly’s (our local store). Maybe you can find something similar close to you :)
