Gluten-Free Ponzu Honey Pulled Jackfruit Sliders

The combination of sweet honey and tangy ponzu sauce balance come together in this delicious Gluten-Free Ponzu Honey Pulled Jackfruit Sliders recipe that’s not just gluten-free but vegetarian, too!

This recipe is simple. Start with a sauté of red onion and garlic, toss in some frozen jackfruit (super convenient to keep this on hand for simple meals), and then comes the sauce! The sauce is a delicious blend of Marukan Gluten-Free Ponzu sauce (I used the Sudachi Citrus one) and honey with ground ginger and red pepper flakes. While that cooks, you whip up some coleslaw and toast some gluten-free buns.

This dish is easy and simple for a weeknight dinner or weekend lunch. It’s extra-special when you top it with pickled shallots (see the note at the end of the recipe).

Ingredients

  • 1 tablespoon olive oil
  • 1 medium red onion , cut in half and then thinly sliced
  • 2 cloves garlic , minced
  • 1 (12-ounce) package frozen jackfruit
  • ¼ cup Marukan Ponzu with Sudachi Citrus
  • ¼ cup honey
  • 1 teaspoon dried ginger
  • ¼ teaspoon red pepper flakes
  • 1 cup coleslaw mix
  • 1 green onion , thinly sliced
  • 2 tablespoons mayonnaise or vegan mayonnaise
  • ½ teaspoon Marukan Rice Vinegar
  • ½ teaspoon sugar
  • ¾ teaspoon kosher or fine sea salt
  • ½ teaspoon pepper
  • 4 gluten-free ciabatta rolls or hamburger buns
  • Pickled shallots *see note

Instructions

  • Heat the oil in a medium skillet with a lad over medium-high heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the jackfruit, Ponzu sauce, honey, ginger, and red pepper flakes. Bring to a boil. Reduce heat, cover the pan, and let simmer for 15 minutes, stirring occasionally.
  • While the jackfruit cooks, make the coleslaw. Combine the coleslaw mix, mayonnaise, vinegar, sugar, salt, and pepper. Mix well.
  • Serve the jackfruit on toasted rolls or buns with the coleslaw and pickled shallots.

Notes

*To make pickled shallot, bring equal parts grenadine and Marukan Seasoned Rice Vinegar to a boil. Add thinly sliced shallots, take off the heat and let sit for at least 15 minutes. Place in a covered glass container and keep in the refrigerator.
