Grilled Tomato Crostini

Grilled Tomato Crostini

Ingredients
- 1- pint cherry or grape tomatoes , cut in half
- 2 cloves garlic , minced
- Olive oil
- Kosher or fine sea salt
- Black pepper
- Gluten-free baguette slices
- Basil leaves for garnish
Instructions
- Prepare grill for direct heat and pre-heat to medium.
- Take a sheet of heavy-duty aluminum foil and fold up four sides to create a basket. Place the grape tomatoes in the center. Add the garlic, 1 tablespoon olive oil, 1 teaspoon salt, and ½ teaspoon pepper. Fold the sides of the foil together, sealing the package.
- Place the package on the grill for 10-15 minutes or until softened and juicy. Remove from the grill and let cool slightly while you grill the baguette slices.
- Brush the baguette slices with olive oil on both sides and season lightly with salt and pepper. Grill over direct heat until toasted. Serve with the tomatoes on top, garnished with basil.
