Gluten Free Asian Salmon with Edamame Rice

Gluten Free Asian Glazed Salmon with Edamame Rice Recipes

I see no reason that a weeknight dinner needs to be “ordinary”. I do, however, see a whole lot of reasons why a weeknight dinner needs to be quick and easy.

After a long day of school, work, and the bazillion other things we do in a normal weekday, do we really want to sit down to something “ordinary”?

My husband likes to tell everyone he talks to that in the 253 years we have been married (my guess is that he is so happily married it seems longer than it really is – at least that’s the story I am sticking to) I have yet to make the same dinner twice.

I don’t want to burst his bubble or ruin the cool, creative rep he has created for me but we all know that could not possibly be true!

The illusion of “something different every night” is created by switching things up, taking everyday ingredients and combining them in different ways.

Gluten Free Chicken Cacciatore

Gluten Free Chicken Cacciatore Pot Pie Recipe

Chicken Cacciatore is an Italian “hunter style” dish of braised chicken that simmers away filling your house with delightful scents. It is best eaten with a bit of focaccia or Italian bread on the side to sop up the juices. And these are both gluten free recipes for another day – a lazy day when you have time to cook and sip wine and sit down for a leisurely meal.

This recipe is a spin on Chicken Cacciatore turned into one of my favorite things – a pot pie. I LOVE pot pies, I make them out of everything; chicken, roasted vegetables, beef, and even seafood. Usually I make them fairly traditionally with the ingredients surrounded by a thickened stock and baked with either a pie crust topping or even polenta. But for this recipe I switched things up a bit.

Gluten Free Chicken Enchiladas Verde

Gluten Free Chicken Enchiladas Verde Recipe

Many of us are looking for recipes that are not just gluten free but grain free too. If you are one of those people and are, like me, addicted to Mexican food, and thought that enchiladas were off the menu, think again!

The first step to these verde (green in Spanish) enchiladas is the sauce. It is so simple to make you may never buy prepared salsa verde again! Simply roast up some tomatillos (a relative of the gooseberry that looks like a green tomato), peppers, onions and garlic then toss it all into the blender with a handful of cilantro leaves and voila! Fresh, vibrant, homemade salsa verde.

To save time in making this recipe I

Gluten Free Molasses Brined Pork Chops

Gluten Free Molasses Brined Pork Chops with Roasted Apples & Balsamic Glaze Recipe

I am a huge fan of brining pork chops – it is, in my opinion, the way to get juicy, flavorful pork chops and turn an inexpensive, everyday dinner item into something special.

In the past I have made brines with boiling water, sugar, kosher salt, a bit of apple cider vinegar and various seasonings. It is great and I still do that often. But as you may have noticed, I am a sort of impatient person and the only thing that I don’t like about my normal way of making brines is that I have to wait for the water to cool down before

People often ask me “what is your favorite recipe?” I am always stumped. I know that I should have an answer ready but with over 250 gluten free recipes published in two books and hundreds more on this site; I really am hard pressed to pick a fav.

I suppose it depends on what kind of day I have had, what I am in the mood for and how hard I want to work for dinner.

Gluten Free Pizza Bread Sticks

Gluten Free Pizza Breadsticks Recipe

Getting kids to eat can sometimes be a problem, especially when they are on a gluten free diet. But here is what I know – kids love to eat anything that can be dunked into something else and they will almost always eat pizza!

This is a super easy, gluten free recipe for pizza breadsticks that can be used as an appetizer or main dish and can even be packed into a lunch box if the kiddos have a way to reheat them briefly (i.e. a microwave).

I made these with my family’s favorite pizza combo – pepperoni and cheese – but you could customize this recipe in a number of ways. For dairy free just add shredded dairy free cheese or you can omit it all together. You could leave out the
