Gluten Free Forgotten Pudding Recipe

Oh boy, you’re going to love this Gluten Free Forgotten Pudding recipe! It’s decadent, creamy, and it can be cooking while you make and eat dinner or even while you sleep.

There are a couple theories for the name of this amazing dessert – one is that it goes into the oven you forget about it. The other (and my personal favorite) is that once tasted, it’s never forgotten!

It’s a pretty simple meringue-based recipe that uses a lot of ingredients that are pretty common in my home kitchen and probably yours, too, if you bake from time to time. The base starts with cream of tartar and salt mixed into eggs (I like to use Nature’s Yoke pasture-raised eggs). Then, it’s baked (for a while), covered in whipped cream and berries, and voila!

Of course, prep this ahead of time, like in the morning before you have dinner guests later that night. Run errands while you wait or cook the rest of your meal. Dessert will be waiting for you … unless, of course, you forget about it!

  • Gluten free nonstick cooking spray
  • Cornstarch
  • 5 large pastured egg whites
  • ½ teaspoon cream of tartar
  • ¼ teaspoon kosher or fine sea salt
  • 1 cup sugar preferably super-fine
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy cream
  • 2 cups fresh berries
  • Finely grated zest of 1 lemon


  • Preheat the oven to 450 degrees. Spray a 9-inch square cake pan with cooking spray. Add enough cornstarch to coat the pan, tapping out the excess.
  • Combine egg whites, cream of tartar, and salt in a mixer. Beat on low speed until foamy then increase the speed to high and add the sugar gradually, about 1 tablespoon at a time. Beat until stiff and glossy. Beat in the lemon juice and vanilla.
  • Spread the mixture into the prepared pan and place in the oven. Immediately turn off the oven and let sit in the oven for at least 6 hours or overnight.
  • Whip the cream and spread on top of the meringue base evenly. Cover pan and refrigerate at least 2 hours.
  • When ready to serve, combine the berries with the lemon zest and spread on top of the cream. Cut into squares and serve.
