Easy Beef Fajitas
Prep this recipe ahead, freeze it, and then just thaw before you want to use it. It’s a flavorful, dump-and-go kind of meal!
Easy Beef Fajitas

Ingredients
- 2 pounds (1 kg) thin cut stir fry beef
- 1 onion , peeled and sliced
- 2 bell peppers , seeded and sliced (1 yellow, 1 orange)
- 1 packet fajita seasoning mix (McCormick is gluten-free, or use recipe listed below)
Instructions
- Place all ingredients into a zippered freezer bag or freezer container. Freeze until ready to use.
- Defrost the bag the night before in the refrigerator and dump contents into your slow cooker in the morning. Add ½ cup of water.
- Cover and cook on low for 8-9 hours, or on high for 6 hours. The meat is done when it reaches desired tenderness. Serve on gluten-free tortillas.

Homemade Fajita Seasoning:
2 teaspoons (5 g) chili powder
1 teaspoon (6 g) kosher or fine sea salt
1 teaspoon (4 g) granulated sugar
1 teaspoon (2.3 g) paprika
½ teaspoon (1.5 g) onion powder
½ teaspoon (1.5 g) garlic powder
¼ teaspoon (0.5 g) cayenne pepper Combine all ingredients in a small bowl or sealable container.
