Green Chile Tuna Melt

My favorite thing to make for lunch is a sandwich, but sometimes my normal turkey and cheese gets boring. I recently spiced things up with this Green Chile Tuna Melt. This warm sandwich is perfect for lunch with being filled with protein that will keep you fuller longer. 

To make this sandwich, you first start out by combining the tuna, Hatch Diced Green Chiles, red peppers, and green onions in a mixing bowl. Once that is all mixed together, you add the mayonnaise, mustard, and lemon juice and mix well. Then you assemble the sandwich and place the sandwich on a hot griddle or skillet until it is golden brown on both sides.

This recipe makes 4 sandwiches and is great for a quick and easy lunch.

Green Chile Tuna Melt

Ingredients

  • 2 (6 ounce) cans solid white tuna, drained and flaked
  • 1 (4 ounce) can Hatch Diced Green Chiles, drained
  • 1 jarred roasted red pepper , patted dry and chopped
  • 2 whole green onions , thinly sliced
  • cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Juice of ½ lemon
  • Salt and pepper , to taste
  • 8 slices gluten-free bread
  • 4 ounces grated white cheddar cheese
  • 2 tablespoons softened butter

Instructions

  • Combine the tuna, chiles, red pepper, and green onion in a mixing bowl. Mix with a fork to break up the tuna. Add mayonnaise, mustard, and the lemon juice. Mix well. Taste and add salt and pepper if needed.
  • Lay out 4 slices of bread. Top each with the tuna mixture. Top the tuna mixture with grated cheese. Butter one side of each slice of bread and top the sandwiches with the bread, butter side up.
  • Heat a large griddle or skillet over medium heat. Place the sandwiches on the hot griddle, butter side down, and carefully butter the tops of the bread. Grill for about 3 minutes or until golden brown. Flip and grill for another 3 minutes or until golden brown and the cheese is melted.
