Easy “Cheesy” Plant Based Zucchini Gratin

The holiday season is here! That means it is time to get your holiday menu together. This year make a side that everyone can enjoy. This Easy “Cheesy” Plant Based Zucchini Gratin is a great addition to any holiday feast.

As the recipe title says, this side is easy to make. You start by placing the zucchini in a colander and sprinkle with salt and toss. Once the zucchini sits for 10 minutes you arrange it in the prepared baking dish. Then you blend the House Party Cheesy Dip with the vegetable broth until it is smooth. You can either use the hot or mild House Party Cheesy Dip in this recipe. We used hot to give this dish an extra kick.  Then you pour that mixture over the zucchini and top with breadcrumbs and bake for 35-40 minutes.

Easy “Cheesy” Plant Based Zucchini Gratin

Ingredients

  • Gluten-free non-stick cooking spray
  • 3 zucchini , sliced ¼ inch thick
  • Kosher or fine sea salt
  • 1 (12 ounce) jar House Party Cheesy Dip, hot or mild
  • ½ cup gluten-free vegetable broth
  • 1 cup gluten-free seasoned breadcrumbs

Instructions

  • Preheat oven to 400°F. Spray an 8 by 8-inch (or similar) baking dish with cooking spray.
  • Place sliced zucchini in a colander, sprinkle with salt, toss, and let sit for 10 minutes. Dry the zucchini and arrange in the prepared baking dish.
  • Blend the House Party Cheesy Dip with vegetable broth until smooth. Pour over the zucchini. Top with breadcrumbs and bake for 35–40 minutes. Let sit for 5 minutes before serving.
