Goat Cheese Butter Board with Pickled Fruit

Butter boards are very similar to charcuterie boards with it consisting of butter spread out on a board with fruit, vegetables, and bread (gluten-free of course) alongside it. This Goat Cheese Butter Board with Pickled Fruit is the perfect spread to serve at your holiday party. This dish is bursting with flavor with savory flavors from the goat cheese butter and sweeter flavors from the pickled fruit. Don’t expect any leftovers from this spread because your party guests will be mingling around it all night.
The star of this spread is the pickled fruit. It gives this dish so much flavor and color. To make the pickled fruit you first start out by heating up the Marukan Organic Seasoned Rice Vinegar, water, and sugar in a saucepan and stir until the sugar dissolves. Then in mason jars add the cloves, cinnamon, star anise, ginger, and fruit. Keep the fruit separated by types in each mason jar. Then pour the brine in the jar and refrigerate.

Pickled Fruit
Ingredients
- 1 cup Marukan Organic Seasoned Rice Vinegar
- 1 cup water
- ¼ cup sugar
- 2 whole cloves
- 1 cinnamon stick
- 1 star anise
- 1 (½ inch) piece fresh ginger
Instructions
- Wash and slice fruit.
- Heat vinegar, water, and sugar in a saucepan, stirring until the sugar has dissolved. Into small Mason jars, add cloves, cinnamon, star anise, and ginger. Pack the fruit into the jars keeping them separated by type. Pour the brine over, let cool, then close the jars, and refrigerate. Can be kept in the refrigerator for up to two weeks.

Goat Cheese Butter Board
Ingredients
- 2 sticks unsalted butter , at room temperature
- 4 ounces soft goat cheese , at room temperature
- 2 tablespoons fresh thyme leaves
- ¼ cup pomegranate seeds
- Fresh thyme sprigs , for garnish
Instructions
- Combine the butter, goat cheese, and thyme, stirring until fully combined. Using a butter knife or off set spatula, spread the mixture onto a serving board or platter.
- Add drained pickled fruit to platter, sprinkle on pomegranate seeds, and garnish with thyme sprigs. Serve with gluten-free crostini or crackers.
