I was invited to brunch at a friend’s and when I asked what I could bring my friend said “How about those blueberry muffins we have heard so much about?”
Ordinarily this would have not been a cause for concern because as I said, I make some pretty darn good blueberry muffins. However, after frantically running to three stores in search of fresh blueberries to no avail, I started to get a bit worried.
It was time to think – what to do, what to do? Sure I could buy frozen blueberries but I am never as happy with the results; the frozen berries seem to put too much liquid into the muffins not matter how well I drain them. I decided to try using freeze dried blueberries instead
Gluten Free Greek Breakfast Bread Recipe
This is how my mind works.
I was looking through an issue of Donna Hay magazine and saw a recipe for breakfast bread. It was lovely looking yeasty dough with eggs cracked on top and baked. This made me think of Greek Easter Bread (bread with hardboiled eggs baked into it.) Which made me think of my friend Angie (she is Greek.) This made me think of South Africa (she is going there in a couple weeks.) Which made me think of elephants (I was charged by elephants when I was in Africa) and that in turn reminded me I need to buy new running shoes (elephants chasing, me running…) and that reminded me that my hubby has a pair of shoes he needs to return. I then thought of Nordstrom which in turn made me think about Angie again (she likes to shop) which made me think of coffee (we are supposed to meet up for coffee later.) Coffee made me think of my friend Anita (she has a great coffee maker) which reminded me that it was my turn to host Anita and her hubby for brunch.
Which brought me back to breakfast bread.

It is officially fall! The way I know that here in Florida is that the temperatures have dropped from the low 90’s to the mid 80’s, hurricane season is upon us, and the markets are filled with Halloween decorations and fall produce.
I can’t think “October” without thinking “pumpkin.” So it only stands to reason I would start baking up some gluten free pumpkin treats. In the past I have made pumpkin scones, pumpkin pies, pumpkin quick breads, and pumpkin cookies but for today I decided to try out some pumpkin cupcakes.
I will be the first to admit I am never going to win any pastry decorating contests. I can’t do fancy piping, have no clue how to fashion things out of fondant, and truth be told, it is about all I can do to get the frosting to look smooth. But even with my cake decorating handicaps, I was able to make these look sort of like pumpkins with the help of food decorating gel and some gumdrop candies. The thing is, if I can do this, so can your kids!
