Easy Gluten Free Pumpkin Empanadas

I know that pumpkin pie time is right around the corner but I couldn’t resist a little prelude.

I decided that little handheld pumpkin empanadas were just the thing! Empanadas are stuffed pastries that are either baked or fried and are very popular in South America.

These quick pastries can be eaten for breakfast, tucked into a lunch box, enjoyed with afternoon tea or coffee and make a nice weeknight fall dessert.

I used to eat in this diner; it was a charming place with good coffee, friendly waitresses and a large menu of All-American comfort food.

I however was more enamored with the omelettes. They were fluffy, soufflé-type omelets you could order with almost infinite choices of fillings and toppings.

The omelettes were not only delicious, they were a fairly safe gluten free bet; they were on of the few things cooked separately in a pan and not on the grill alongside things like pancakes and French Toast. They were also a bargain – made with 4 eggs, each omelet could feed two people.

I have always had a soft spot in my heart for New Orleans. It is a beautiful city with a rich and varied history, a fascinating clash of cultures and a joyous spirit that washes over everyone who has the pleasure of visiting.

And then there is the food! Creole, Cajun, French and Southern; it is a foodie paradise. Unfortunately it can also be a bit of a challenge on a gluten free diet. Many of the food that made New Orleans famous are filled with flour. Forbidden to us are the beignets, gumbos and oyster po’boys.

I recently went to New Orleans for a short visit. It was the first time I had been back since I was there a mere 24 hours after Katrina had ripped through the city leaving a path of devastation and destruction in her path. During my previous visit the French Quarter, normally a bustling beehive of activity was eerily quiet and deserted. Homes and businesses were flooded, cars abandoned on the side of the road and the jazz so associated with New Orleans was silenced.

This recipe comes to you thanks to my g-kids, a difference of opinion that quickly escalated into a conflict to rival that in the Middle East and the Nobel Prize-winning-worthy peace-keeping efforts of yours truly.

It all started out innocently enough.

Me – “Hey guys, what should we make for dinner?”

Simultaneously: Him – “Meatballs!” Her – “Mac and Cheese!”

Followed by (also simultaneously): Him- “NO! Meatballs!” Her – “NO! Mac and Cheese!”

This went on for what seemed like an hour, each time his voice becoming lower and more menacing and her voice becoming higher and more screeching.

Me – “Why don’t we make both?” Them – “NO!!!” (At least on that they could agree.)

Growing up I very rarely ate prepared frozen foods. We sat down to dinner for a freshly cooked, lovingly prepared meal every night. The exception was on nights when my parents went out and we were treated to T.V. dinners, chicken pot pies and fish sticks. Oh how I loved those nights! I particularly loved the fish sticks.

These days I don’t particularly want to eat frozen prepared food but I still like fish sticks. It’s just that nowadays I like my fish sticks with a little more pizazz than the frozen ones we had on my parent’s date night.

With 5 ingredients (and I do mean 5!) and about 30 minutes you can whip up these toasty, coconut crusted gluten free fish sticks that I am sure your family will love. And by the way, those 5 ingredients even include a simple but amazing sauce.

Pound cake is not considered the most gorgeous gal at the prom; in fact, there are those who would consider it quite plain, ordinary, and run of the mill. Not me. I have always loved pound cake.

I don’t care that it isn’t all dolled up with frosting and sugar roses. I just think it doesn’t need the adornment to shine, like a truly beautiful woman who needs no makeup.

Sure I like chocolate layer cake but pound cake and I go way back. It was the first cake I ever “made” or should I say defrosted? Remember Sarah Lee Pound Cake? I do. In fact it was one of the few things I mourned when I went gluten free. When I was developing my own gluten free flour blend I didn’t consider the development complete until it produced a perfect pound cake.
