Gluten Free Cherry S’More Brownies Recipe

I received an email from Georgia, a 15 year old gal who lives in … guess where?  Yep, you guessed it – Atlanta, Georgia.  She has been baking for a couple of years and is newly diagnosed with Celiac Disease.  Georgia asked me if I could convert one of the recipes she loves to bake for her friends and family to gluten-free.  She has been baking and loving this particular recipe for some time and does not want her gluten-free diet to keep her from enjoying what has become her signature treat – Cherry S’More Brownies.

The original recipe (which can be seen here) used graham crackers and boxed brownie mix.  My initial thoughts were “this is easy, just sub out the graham crackers for gluten free ones and use a gluten-free brownie mix.” But Georgia decided she wanted to challenge herself a bit more with her baking and make it from scratch.  Don’t you just love that?

The brownies have a graham cracker crust, a brownie base and are topped with nuts, chocolate chips, mini marshmallows and cherries; pretty much a piece of ooey, gooey brownie heaven.

I converted the recipe to gluten-free and tweaked it a little in the process. The toppings were a little restrained in my opinion. Restraint is great for little black dresses but when it comes to dessert I say “the more the better.”

I am trying to talk Georgia into starting her own gluten-free blog {hint, hint, hint}. So far she doesn’t feel ready for it but I am hoping with a little encouragement from you all she will come around!

The brownie part of this recipe is good on its own as a nice fudgy everyday brownie and can also be made with bittersweet chocolate if you prefer a richer taste. I used semi-sweet here to keep it more like what the flavor of a box mix would be.

Ingredients

  • 1 cup plus 4 tablespoons unsalted butter – use divided
  • cups Gluten Free Graham Style Crumbs
  • cups granulated sugar – used divide
  • 1 cup all purpose gluten free flour blend
  • 1 teaspoon baking powder
  • ½ teaspoon kosher or fine sea salt
  • teaspoons instant espresso powder or dried coffee crystals
  • 1 ( 12 ounce) bag semi-sweet chocolate chips
  • 3 large eggs – lightly beaten
  • 1 teaspoon pure vanilla extract
  • 1 cup walnuts or pecans – chopped
  • 1 10-ounce jar maraschino cherries – drained, blotted dry and cut in half
  • 2 cups miniature marshmallows

Instructions

  • Preheat the oven to 350 degrees. Spray a 13x9x2 inch baking pan with gluten-free, non-stick cooking spray.
  • Melt 4 tablespoons of the butter. In a mixing bowl, combine the graham style crumbs with ¼ cup sugar and the melted butter. Pat firmly into the prepared baking dish covering the bottom with an even layer. Bake for 10 minutes. Leave the oven on.
  • In a medium mixing bowl, whisk together the gluten-free flour blend, baking powder, salt and instant espresso, set aside.
  • Measure ½ cup of the chocolate chips and set aside. In a large microwave or heat safe mixing bowl combine the rest of the chips with the remaining 1 cup butter and microwave for 3-3½ minutes or until the butter is totally melted and most of the chips are melted. (Alternately you can melt the chocolate and butter in a bowl over a pot of barely simmering water making sure the bottom of the bowl does not touch the water.) Stir the chocolate and butter together until the chocolate is fully melted, and the mixture is combined and glossy. Stir in the remaining 1 cup of sugar then the eggs, flour mixture and vanilla. Pour the batter over the graham crust and bake for 20 minutes. Leave oven on.
  • Top the brownie layer evenly with the reserved ½ cup of chocolate chips, the chopped walnuts or pecans, the drained, dried and halved cherries and the marshmallows. Return to the oven and cook for 5-7 minutes or until a toothpick inserted in the center comes out almost clean. Turn on the broiler and broil for just about 30 seconds or so to brown up the marshmallows – watch carefully so they don’t burn.
  • Let the brownies cool. Cut into squares.

    Dear Anonymous – Yep, just make the brownies per the instructions on the box, pour over the crust and bake 5 minutes less then ad the toppings and proceed from there.

    Georgia and Carol, this was an awesome collaboration! Smores are more than just my weakness, they are my DOWNFALL! I made a smores (either in my fireplace or in my microwave when it was too hot for a fire) every single day of my pregnancy with my first son. I was gluten-free by the time of my second son and they did not hold the same allure on gf graham crackers.
    This recipe is going to be made immediately here to give me more smore fix!!!
    What a great idea Georgia! I love that you wanted to take it a step beyond and make them from scratch.
