Ingredients

For the muffins:

  • Gluten-free nonstick cooking spray
  • 3 eggs room temperature
  • ¼ cup melted coconut oil
  • 3 tablespoons unsweetened almond milk
  • 2 tablespoons coconut sugar
  • ½ teaspoon vanilla extract
  • 1 cup blanched almond flour
  • ¼ cup arrowroot starch
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda

For the filling and topping:

  • ½ cup naturally sweetened jam or preserves
  • 2 tablespoons coconut sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoons melted coconut oil

Instructions

  • Preheat the oven to 350ºF. Spray a mini muffin tin with nonstick cooking spray.
  • Combine the eggs, coconut oil, almond milk, coconut sugar, and vanilla extract in a blender and blend until smooth and light, about 2 minutes.
  • Add the almond flour, arrowroot starch, salt, and baking soda.
  • Blend again for 2-3 minutes, until very smooth, scraping down the sides of the blender as needed.
  • Pour or scoop the batter evenly into 16 mini muffin molds.
  • Bake for 10 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  • Cool for 5 minutes, then carefully transfer to a wire rack to finish cooling.
  • Fit a pastry decorating bag with a small round tip and fill the bag with the jam.
  • Carefully insert the tip into the top of a muffin and gently squeeze to fill the muffin with jam.
  • Stop just as the muffin feels “full.” (If excess jam leaks out, you can wipe it away with a clean dish towel, but the topping will cover it as well.)
  • For the topping, combine the coconut sugar and cinnamon in a small bowl.
  • Working with one muffin at a time, brush the top with melted coconut oil and then gently dip into the sugar-cinnamon mixture.
  • Repeat with remaining muffins.
