Sweet & Sour Caramelized Onions

Ingredients
- 4 pounds boiler or pearl onions peeled
- 1 cup raisins or dried cranberries
- 3 tablespoons balsamic vinegar
- 2 tablespoons butter melted
- 2 tablespoons sugar
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1/3 cup pine nuts
Instructions
- Use a 6-quart slow cooker.
- Peel the onions and place them into the bottom of the slow cooker.
- Add the raisins, vinegar, butter, sugar, salt, and pepper.
- Stir to combine.
- Sprinkle with the pine nuts.
- Cover and cook on high for 3 hours, stirring every 30-40 minutes. The onions are finished when they are brown on the sides and have begun to wilt.
- Once finished cooking, you may keep them on the “warm” setting for an additional 3 hours.
