Ingredients

  • 2 medium zucchinis
  • Olive oil for cooking (optional)
  • ½ cup homemade or store-bought pesto
  • Basil leaves to garnish
  • Grated Parmesan cheese or nutritional yeast to garnish

Instructions

How to Spiralize a Zucchini

  • For 2 servings, you’ll need:
  • 2 medium zucchinis
  • A spiral slicer (available at many kitchen supply stores and online)
  • Wash both zucchinis and trim off the ends with a sharp knife. Slice both zucchinis in half crosswise for easier spiralizing.
  • Use your spiral slicer to slice each zucchini half into noodles. When you have finished spiralizing one half, add the noodles to a bowl and repeat until all the zucchini has been spiralized.
  • Prepare the zucchinis as instructed above.
  • If desired, heat a skillet over medium heat. Drizzle with a touch of olive oil and add the noodles to the pan. Cook until the noodles have just started to soften. Transfer to a large bowl. Add pesto and toss to coat.
  • Divide between 2 plates. Garnish with basil and cheese or nutritional yeast.
