Fiesta Guacamole

Ingredients

  • 2 medium ripe avocados halved and pitted
  • 1 medium Roma tomato seeded and chopped small
  • ½ cup fresh or frozen corn kernels thawed if frozen
  • 1 medium Serrano pepper seeded and finely chopped (optional)
  • ¼ cup finely chopped scallions
  • ¼ cup finely chopped cilantro
  • 2 tablespoons fresh lime juice
  • ½ teaspoon granulated garlic powder
  • Sea salt to taste

Instructions

  • Scoop the flesh of the avocados into a medium bowl. Mash with a fork until smooth. Stir in the tomato, corn, pepper (if using), scallions, cilantro, lime juice, and garlic powder. Season to taste with salt and serve right away.
