Ingredients

  • cups blanched almond flour
  • 1 teaspoon baking soda
  • ½ cup coconut oil melted
  • ½ cup honey gently warmed
  • ½ cup creamy unsweetened almond butter
  • 2 large eggs room temperature, lightly beaten
  • 2 tablespoons key lime juice or 2 teaspoons lime extract
  • cups unsweetened coconut flakes

Instructions

  • Preheat the oven to 325ºF. In a large bowl, combine the almond flour and baking soda. In a blender or food processor, combine the coconut oil, honey, almond butter, eggs, and lime juice. Blend or process until smooth. Add the wet ingredients to the dry and mix well to combine. The batter will be very thick.
  • Spread the batter evenly into the prepared baking dish. Top with the coconut flakes. Bake for 25-30 minutes or until cooked through. Cool completely before cutting into squares. Store in an airtight container in the refrigerator.
