Ingredients
- 1 pint cherry tomatoes quartered
- 2 small cucumbers sliced in half lengthwise, seeded, and diced
- 1 small red onion diced
- 1 cup pitted kalamata olives chopped
- 1 15-ounce can cooked chickpeas
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh chives
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons red wine vinegar
- 2 teaspoons Dijon mustard
- Kosher or fine sea salt to taste
- Freshly ground black pepper to taste
Instructions
- In a large bowl, combine the tomatoes, cucumbers, onion, olives, chickpeas, parsley, and chives. In a small bowl, whisk together the olive oil, lemon juice, vinegar, and mustard. Pour the dressing over the salad and toss to coat. Taste and season with salt and pepper. Refrigerate in an airtight container until ready to serve.
