Gluten-Free Cheesecake Brownies
Happy Valentine’s Day! To show you I care, and to help you show your loved ones you care, here’s a delicious Gluten-Free Cheesecake Brownies recipe. Simple yet decadent, this dessert will fill even the most anti-Valentine’s-Day hearts around you with love!
At first glance, you might think this uses a lot of ingredients, but you probably have a lot of these on hand if you bake from time to time. The only ingredients you might not have are espresso powder and cream cheese, so pop over to the store for those and while you’re there, pick up Wholesome Organic Sugar (sugar cane workers for many of the big name sugar companies have some pretty poor working conditions, so if there’s one thing you do to show love this holiday, opt for Wholesome, which is Fair Trade Certified).
These brownies don’t take too long to whip up, so if you’re planning something for later this evening, this is a great dessert option. They are creamy, rich, and full of sweet flavor!
Gluten-Free Cheesecake Brownies
Ingredients
For the Brownie Layer:
- Gluten free non-stick cooking spray
- ½ cup grapeseed or vegetable oil
- 1 cup Wholesome Organic Sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ cup gluten-free all-purpose flour
- ⅓ cup unsweetened cocoa powder
- 2 teaspoons instant espresso or coffee powder
- ½ teaspoon baking powder
- ½ teaspoon kosher or fine sea salt
For the Cheesecake Layer:
- 8 ounces cream cheese , at room temperature
- ⅓ cup Wholesome Organic Sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
Instructions
For the Brownie Layer:
- Spray a 9-inch square baking pan with cooking spray. Preheat the oven to 350 degrees.
- In an electric mixer, preferably fitted with the whisk attachment, beat the oil and sugar on high speed until fully combined, about 1 minute. Add the eggs, one at a time, mixing well after each addition. Beat in the vanilla extract.
- In a medium mixing bowl, combine the flour, cocoa powder, espresso powder, baking powder, and salt. Whisk until fully combined and no lumps. Add to the mixing bowl and mix on low until fully combined. Stir with a spatula a few times to make sure the mixture is fully combined. Pour the batter into the prepared baking dish.
For the Cheesecake Layer:
- In a clean mixing bowl, beat the cream cheese until smooth. Add the sugar, egg, and vanilla and beat until fully combined. Dollop large spoonfuls on top of the brownie layer. Swirl the two layers together lightly with a dinner knife.
- Bake for 30 minutes. Let cool completely, then cut into squares.
