Instant Pot Sweet & Smoky Pulled Chicken Tacos

Let me start by saying this is really freakin’ good chicken! I was going to name it that, in fact, but I figured I’d be a little more detailed in the name instead. So instead I went with Instant Pot Sweet & Smoky Pulled Chicken Tacos. The chicken is tender and flavorful, full of sweet and well, smokiness.

The sweet comes from none other than Wholesome Organic Honey, and the smokiness comes from smoked paprika, cumin, and cayenne pepper. It comes together with salsa verde and gets accented by onion powder, garlic powder, salt, and pepper. No chopping, just mixing some spices and bottled ingredients together and adding it all to the Instant Pot with chicken thighs. It’s a set it and forget it type of meal, though you’re only forgetting it for about 12 minutes. And just like that, the bulk of your tacos is finished. Simply warm up some corn tortillas and top the chicken with your favorite taco toppings (I gave suggestions in the recipe).

Ingredients

  • 1 cup jarred or homemade salsa verde
  • ¼ cup Wholesome Organic Honey
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher or fine sea salt
  • ½ teaspoon pepper
  • ¼ - ½ cayenne pepper
  • 6 boneless, skinless chicken thighs

For Serving:

  • Corn tortillas
  • Cilantro
  • Pickled jalapeno
  • Pickled red onion
  • Shredded cheese

Instructions

  • Combine the salsa, honey, paprika, onion powder, garlic powder, cumin, salt, pepper, and cayenne pepper in the Instant Pot. Stir to combine. Add the chicken thighs and set the Instant Pot to pressure, high, for 12 minutes. Let the pressure release naturally.
  • Using two forks, shred the chicken. Stir into the sauce well, then remove with a slotted spoon.
  • Serve with corn tortillas and the accompaniments of your choice.
