What did I eat this week?

I’ve been browsing cooking and food related YouTube videos as of late and I found myself clicking on ones titled “What I eat in a day.” I know, who cares what you eat in a day, right? Wrong. A lot of people want to know how people who are seemingly healthy or have a good physique or have certain dietary restrictions eat on a daily basis. Not just that, but maybe you just want to know what another person eats in a day because you’re tired of the same food routine and want to get some inspiration. Well, those videos are the inspiration for today’s post!

Aside from some basic necessities like coffee, I ate a couple of salads a few days for lunch, went to eat at a local Mexican restaurant for tacos on Tuesday, and had roasted chicken with vegetables a couple nights for dinner. I’ll be honest, I can’t remember everything I ate this week, but here are a few more things that stood out.

Let’s start with breakfast, which I oftentimes don’t eat but this week I had oatmeal a couple times, including in the form of my baked oatmeal cups. I used Gluten Free Prairie for my oat needs, and if you’re one of those who thinks oats are oats so the brand doesn’t matter, that’s simply not true. Oats can contain gluten because of cross contamination due to being processed or harvested with shared equipment, so it’s always important to get certified gluten-free oats. Now, if you want to take it a step further, especially if you’re very gluten sensitive or have had experiences where oats don’t sit right with you even if they are certified gluten-free, then you want to go for “purity protocol” oats. Further Foods Vanilla Collagen Berry Smoothie

Collagen is always a part of what I eat (drink?) in a day! It makes my skin look better, my joints feel better, and it’s so easy to incorporate into your diet. I usually add a scoop to my coffee but recently I’ve been really into this vanilla collagen from Further Foods and I’m a bit of a purist when it comes to coffee so instead I make a mid-morning or after lunch smoothie and add this collagen into that. This collagen is different from others because it contains tremella mushroom, which has vitamin D and antioxidants and is said to help nourish and hydrate your skin. For my daily smoothie, I typically use blueberries or strawberries, a handful of baby kale or baby spinach, half a banana, a spoonful or two of probiotic-rich yogurt, a splash of water or milk (coconut water also works well if you like coconut), a scoop of collagen, and a scoop of protein powder.

On the days I don’t eat breakfast, which is most days, I tend to eat an early lunch that I sometimes use as an opportunity to eat breakfast foods. Hmm… I guess we call that brunch, don’t we? Ok, so when I ate brunch this week my go-to was to gussy up some already delicious Veggies Made Great frittata bites. I’d heat about 2-3 of them up, mash them with a fork, and place them on some warm corn tortillas with a little salsa for simple, yet satisfying breakfast tacos! Yum. You can do this with their superfood veggie cakes or frittatas and they come in a variety of different flavor/ingredient combinations so you definitely won’t get bored. What makes Veggies Made Great different from other microwave-and-eat breakfast products is that they are loaded with veggies; in fact, veggies are the first and primary ingredient in every one of their products. Paleo Pro Chocolate Shake

As I mentioned previously, I often have a daily smoothie, and this week was no exception! Since I was making a smoothie with collagen I added vanilla Paleo Pro protein powder to my smoothie a couple of the days. But on the days I skipped breakfast but still wanted to get some protein in to keep my energy up, I’d make a regular shake with milk or water and Paleo Pro chocolate protein powder. I mix up my protein powders from time to time, sometimes using vegan protein, sometimes whey protein, and sometimes bone broth protein (Paleo Pro). What I like about Paleo Pro is that it’s pretty light, whereas whey protein can be kind of dense and too filling. Plus, you get some of the benefits of bone broth without having to heat up actual bone broth and sip it. It’s like a 2-for-1 deal!

In between lunch and dinner I often feel like snacking. Some days I quench that feeling with a smoothie or a protein shake and that handles it, but other days I need something a bit heartier. I’ll often snack on some hard-boiled eggs or perhaps some nuts and cheese, but this week I dug around in the freezer and found taquitos. What better way to unwind after work than snacking on some taquitos and watching a couple episodes of a show on Netflix? Finger foods like that are perfect for those kinds of moments, and what’s great about Starlite Cuisine’s taquitos is that they are vegan, non-GMO, contain no trans fats or cholesterol, and are full of flavor. If I’m going to eat packaged foods I still want them to be as clean as possible, and I think the fact that Starlite Cuisine is free from processed meats helps to make their products rather clean.
