Grilled Thai Chicken Pizza
Pizza is one of those things that can traverse cuisines – you have Mexican pizza, Thai pizza, Hawaiian pizza … I’ve even seen Cuban pizza (as in a Cuban sandwich with mustard, pork, and pickles on it). Today, I’m offering up a Grilled Thai Chicken Pizza recipe – it’s delicious, it’s pretty simple, and it’s the best of two worlds. Plus, it’s made on the grill, which is an awesome way to make pizza, if you haven’t yet tried that.
This pizza starts with a pre-made gluten-free pizza crust of your choosing, then it’s topped with chicken (I use a rotisserie chicken, diced) that’s been drenched in a savory-sweet Thai sauce made of soy sauce and rice vinegar (from Kikkoman), peanut butter, brown sugar, and chili garlic sauce. Grill it, then top it with shredded carrots, cilantro, and chopped peanuts – wow! You’re going to love this one.
If you’re nut-free, use sunflower seed butter instead of peanut butter and omit the chopped peanuts at the end. If you’re dairy-free, swap the mozzarella cheese with a dairy-free alternative that melts well.

Grilled Thai Chicken Pizza
Ingredients
- Vegetable oil
- 1 (9-10 inch) gluten-free pizza crust
- ½ cup creamy peanut butter
- 3 tablespoons Kikkoman® gluten free soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon Kikkoman® rice vinegar
- 1-2 teaspoons chili garlic sauce
- 3 tablespoons water
- 4 ounces cooked chicken , diced
- 1 cup grated mozzarella cheese
- ½ cup shredded carrots
- ½ cup fresh cilantro leaves
- ¼ cup roasted peanuts , chopped
Instructions
- Preheat the grill to 400-450 degrees. Brush the grates with oil. Brush both sides of the pizza crust lightly with oil.
- In a saucepan, combine the peanut butter, soy sauce, brown sugar, rice vinegar, chili garlic sauce, and water. Cook over medium heat, stirring, until everything is melted together. Pour half the sauce into a bowl, add the chicken, and toss to coat.
- Spread the rest of the sauce over the dough. Top with ¾ cup cheese, the chicken, and then the rest of the cheese. Grill for 8-10 minutes or until the crust is browned and the cheese has melted.
- Top with the carrots, cilantro, and peanuts.
